Ingredients

  • 6 chicken breast

  • 190ml chicken stock

  • 1 splash sherry

  • 2 cloves garlic

  • 1 tbsp cornflour

  • 2 tbsp cream or creme fraiche, to taste

  • 1 tbsp butter

  • 2 handfuls mushrooms chopped

  • 1 tbsp thyme chopped

  • 1 apples sliced thinly

Method

  1. Gently fry the garlic in the butter then add chicken to brown.
  2. Add the apples and stir around then add in the mushrooms.
  3. Slosh sherry in and leave to reduce - around 5 minutes or so (depending on how much you put in).
  4. Add the thyme.
  5. Add around the chicken stock and leave to simmer for 40 minutes-1 hour.
  6. Thicken with cornflour if required.
  7. Serve chicken onto plates and stir cream/creme fraiche into sauce and pour over.

Handy Hint

Cooking for longer seems to increase the sweetness. You can cool and freeze at the stage before adding the cream.

    A hit everytime I have made it. I serve with roast potatoes and green veg.
