  • 6 chicken breast

  • 190ml chicken stock

  • 1 splash sherry

  • 2 cloves garlic

  • 1 tbsp cornflour

  • 2 tbsp cream or creme fraiche, to taste

  • 1 tbsp butter

  • 2 handfuls mushrooms chopped

  • 1 tbsp thyme chopped

  • 1 apples sliced thinly


<ol> <li>Gently fry the garlic in the butter then add chicken to brown.</li> <li>Add the apples and stir around then add in the mushrooms.</li> <li>Slosh sherry in and leave to reduce - around 5 minutes or so (depending on how much you put in).</li> <li>Add the thyme.</li> <li>Add around the chicken stock and leave to simmer for 40 minutes-1 hour.</li> <li>Thicken with cornflour if required.</li> <li>Serve chicken onto plates and stir cream/creme fraiche into sauce and pour over.</li> </ol>

Handy Hint

<p>Cooking for longer seems to increase the sweetness. You can cool and freeze at the stage before adding the cream.</p>

    A hit everytime I have made it. I serve with roast potatoes and green veg.
