Ingredients

  • 2 tbsp olive oil

  • 2 tbsp dill

  • 1/2 lemon, juiced

  • 2 white fish

  • 4 tomatoes

  • 2 cloves garlic, unpeeled

  • 4 potatoes, cut into wedges

  • 1 onions, peeled and roughly chopped

Method

  1. Pre-heat the oven to Gas 4/ 180C/ 350F.
  2. Heat the olive oil in a roasting tin and cook onions, garlic and potatoes for about 10 mins.
  3. Add fish, tomatoes, dill and lemon juice and return to oven for 30-40 minutes.
  4. Season with salt and pepper and serve
