  • 1 tsp tomato puree

  • 4 chicken breast

  • 2 tbsp soy sauce

  • 1 tbsp fresh ginger finely chopped

  • 3 cloves garlic chopped

  • 4 tbsp coriander chopped

  • 1 tsp chinese five spice

  • 3 tbsp marmalade

  • 4 spring onions finely chopped


  1. Mix all the marinade ingredients together in a shallow dish.
  2. Slash the chicken breasts and coat in the mixture.
  3. Leave to marinade for at least 10 minutes.
  4. Can be cooked in a griddle pan, dry frying pan or BBQ'd.
  5. Serve with rice and veg.

Handy Hint

Soak the pans while you're eating. The sugar in the marinade makes it set like concrete otherwise!

    DH loves this with sticky jasmine rice and spinach. Surprisingly low fat
