  • 1 tsp tomato puree

  • 4 chicken breast

  • 2 tbsp soy sauce

  • 1 tbsp fresh ginger finely chopped

  • 3 cloves garlic chopped

  • 4 tbsp coriander chopped

  • 1 tsp chinese five spice

  • 3 tbsp marmalade

  • 4 spring onions finely chopped


<ol> <li>Mix all the marinade ingredients together in a shallow dish.</li> <li>Slash the chicken breasts and coat in the mixture.</li> <li>Leave to marinade for at least 10 minutes.</li> <li>Can be cooked in a griddle pan, dry frying pan or BBQ'd.</li> <li>Serve with rice and veg.</li> </ol>

Handy Hint

<p>Soak the pans while you're eating. The sugar in the marinade makes it set like concrete otherwise!</p>

    DH loves this with sticky jasmine rice and spinach. Surprisingly low fat
