Ingredients

  • 1/2 tsp bicarbonate of soda

  • 225ml milk

  • 2 tsp baking powder, or use self raising flour and no baking powder

  • 1 tsp vanilla essence

  • 1/2 tsp salt

  • 75ml vegetable oil

  • 1 110-175g (4-6oz) fine white granulated sugar

  • 1 eggs, beaten

  • 3 tbsp unsweetened cocoa

  • 1 plain chocolate chips , (optional)

  • 255g plain flour

Method

  1. Mix the wet ingredients together.
  2. Add the wet ingredients to the dry ingredients and stir to mix, try not to over-stir.
  3. Fill the muffin cases 3/4 full and bake for 20-25 minutes at 200C/Gas Mark 6.

Handy Hint

I put the oven on before I start preparing to make sure it's good and hot and they take 20 minutes.
