Tuna and vegetable sauce for pasta

Ingredients

  • 1 tbsp olive oil

  • 1 tin tuna, drained

  • 1 tsp dried basil

  • 1 tin tomatoes, (or 300ml passata)

  • 1 clove garlic, crushed

  • 1 small onion, chopped

  • 2 mushrooms, chopped small (or 1/2 sweet pepper)

  • 100g tinned sweetcorn, (optional)

  • 1 tsp lemon juice, (or 1 slice fresh lemon, optional)

Method

  1. Fry onion and garlic in olive oil until softened.
  2. Add the other veg and cook for 5 minutes.
  3. Add tomatoes or passata and tuna. Mix in well.
  4. Add basil, black pepper and lemon juice to taste.
  5. Cook over a medium heat for 10-15 minutes.
    Serve with pasta.
  6. Grate a little cheese over the top if desired.
  7. Enjoy!
