1 onion chopped
1 tsp mixed spice
400g coconut milk
250g mushroom sliced
1 1/2 yellow or orange pepper sliced
1 clove garlic chopped
- Cook the onions and the peppers in a wok or frying-pan with a small amount of olive oil with the garlic for 5 minutes.
- Stir well, then add the mushrooms and cook until slightly golden.
- Add the rest of the ingredients and cook for 20-30 minutes until the sauce is thick and creamy.
- Serve with rice.
I usually add chicken in with mine and it tastes great but not necessary.
