2 red pepper
150g goat's cheese
1 bunch basil
- Slice the red peppers in half longways and scoop out the seeds.
- Slice and place enough goats cheese into the red pepper cavity to fill it
- Drizzle with olive oil and roast in the oven gas mark 4 for 20mins.
- Scatter fresh basil and serve on a bed of salad.
