Ingredients

  • 200g self-raising flour

  • 225g caster sugar

  • 1/2 tsp vanilla essence

  • 85ml vegetable oil

  • 2 eggs, lightly beaten

  • 1 banana, mashed

  • 60g pecans, chopped

  • 4oz tinned pineapple, drained - either chunks or rings chopped up

Method

  1. Preheat the oven to 170C.
  2. Place all the ingredients into a bowl and mix thoroughly.
  3. Half fill cup cake cases with the mixture and place into the oven for 20mins.
  4. You can pipe cream cheese icing on top when they are cool.

    These cakes are brilliant (and brilliantly easy). I use half the amount of sugar with good results.

    vet50 I would try the pineapple first before something else, you can't really taste it that much & he may not notice am only suggesting this as my DH is allergic to pineapple and still managed to try some!!

    Cupcake cases = muffin cases Cupcakes by definition have tops completely covered in icing, the case holds all the icing in place as the tops are roundy. Without the cases, they would be volcano lava cakes :-)

    can anyone tell me what dup cake cases are and where to buy them, will muffin cases do and can you use an ordinary indiv cakes tin pls? Any substitute for pineapple which my son dislikes?
