Ingredients

  • 15g butter

  • 1 tbsp caster sugar

  • 150ml dry white wine

  • 1 chicken stock cube, or vegetable. 600ml water

  • 2 cloves garlic, crushed

  • 3 large onions, thinly sliced (preferably Spanish)

  • 1 tbsp Worcestershire sauce

  • 1 tbsp French brandy

Method

  1. Melt butter and add sliced onions.
  2. Sprinkle in sugar and cook for 10-12 mins until onions have caramel tinge.
  3. Add garlic and cook for 1 minute.
  4. Pour in wine and cook vigorously for 2 mins.
  5. Stir in stock and worcestershire sauce.
  6. Bring to boil, reduce heat and simmer for 15-20 mins.
  7. Stir in brandy & serve.
