  • 15g butter

  • 1 tbsp caster sugar

  • 150ml dry white wine

  • 1 chicken stock cube or vegetable. 600ml water

  • 2 cloves garlic crushed

  • 3 large onions thinly sliced (preferably Spanish)

  • 1 tbsp Worcestershire sauce

  • 1 tbsp French brandy


<ol> <li>Melt butter and add sliced onions.</li> <li>Sprinkle in sugar and cook for 10-12 mins until onions have caramel tinge.</li> <li>Add garlic and cook for 1 minute.</li> <li>Pour in wine and cook vigorously for 2 mins.</li> <li>Stir in stock and worcestershire sauce.</li> <li>Bring to boil, reduce heat and simmer for 15-20 mins.</li> <li>Stir in brandy &amp; serve.</li> </ol>
