  • 2 tbsp milk

  • 1 tsp baking powder

  • 60g sugar

  • 120g flour

  • 1 lemon juice and zest

  • 3 eggs

  • 80g cornflour

  • 1 pineapple

  • 200g icing sugar

  • 6 amaretto biscuits


<ol> <li>Beat the egg yolks with half of the sugar then whisk the whites with the remaining sugar.</li> <li>Add the lemon zest, the flour, the cornflour, the baking powder, the juice of the lemon, the milk and stir it in gently.</li> <li>You need to reach a smooth consistency. Add extra milk if needed; pour the mixture into a greased round baking tin; crush the amaretti and put them over the mixture.</li> <li>Clean and cut the pineapple into slices and lay it over the mixture. Bake for 25-30 minutes.</li> <li>Sprinkle some icing sugar over it.</li> </ol>
