  • 75g icing sugar

  • 125g dark chocolate

  • 2 tbsp cocoa powder

  • 50g desiccated coconut

  • 2 tbsp rum

  • 100g breadcrumbs (ideally cake crumbs if you have them)

  • 1 knob butter


<ol> <li>Melt butter and chocolate in a bowl over simmering water. Take from the heat and stir in rum, coconut, crumbs and 50g of icing sugar. Beat until combined.</li> <li>Roll into small balls and leave to set on baking paper.</li> <li>Sieve remaining icing sugar onto one plate and cocoa powder onto another. Roll half of the balls in each.</li> </ol>

Handy Hint

<p>Use white chocolate and coconut rum instead if you fancy.</p>
