Broccoli lemon chicken

  • 350g chicken breast sliced

  • 200ml chicken stock

  • 1/2 lemon zested

  • 1 tbsp honey or tsp caster sugar

  • 1 tbsp sunflower oil

  • 200g long stem broccoli

  • 2 cloves garlic crushed

  • 1 tsp cornflour check label to see if gluten-free

  • 1 handful roasted cashews


<ol> <li>Heat the oil and fry the chicken strips for a few minutes.</li> <li>Remove from pan and add garlic and broccoli (or additional seasoning).</li> <li>Stir-fry for a minute.</li> <li>Cover and cook until almost tender.</li> <li>Mix stock, cornflour and honey or sugar to make thick sauce.</li> <li>Tip the chicken into mixture and heat through.</li> <li>Add lemon zest and juice, plus cashews, for crunch.</li> </ol>

    Made this this evening, needed a bit more honey, but otherwise was delish! and so easy, the addition of the cornflour makes a lovely thick glossy sauce. I also substituted green beans for broccoli. However, all plates were cleared and seconds were demanded !

    This is taken straight out of 101 one pot recipes. A book I highly recommend but felt it should be credited.
