Ingredients

  • 200g self-raising flour

  • 150g caster sugar

  • 3 large egg

  • 1/2 tsp baking powder

  • 25g cocoa powder or ordinary milk powder

  • 1/2 lemon zested

  • 1/2 tbsp lime juice

  • 3 tbsp Malibu (optional)

  • 175g butter (at room temperature)

Method

  1. Preheat oven to 160C/140C fan/Gas Mark 3.
  2. Grease a 900g (2lb) loaf tin.
  3. In a large bowl beat butter and caster sugar until light and fluffy.
    lightly beat in one egg along with a tbsp flour. Repeat with remaining eggs.
  4. Mix in Malibu if using and then add remaining flour and fold in lightly.
  5. Put into waiting tin and bake for 45-50 minutes until golden.
  6. Mix zest with icing sugar and enough lime juice to make thick but spreadable paste.
  7. Spread over top of cake and then sprinkle with coconut.
