  • 100g cheddar grated

  • 3 tbsp balsamic vinegar

  • 1 red onion thinly sliced

  • 1 red pepper sliced

  • 2 courgette sliced

  • 2 tbsp honey

  • 500g puff pastry or one pack

  • 1 aubergine sliced

  • 12 mushrooms sliced


<ol> <li>Drizzle all the sliced vegetables with the balsamic vinegar, honey and a drizzle olive oil and place them on a baking tray in the oven for 20 minutes.</li> <li>While they are cooking, prepare the pastry by rolling it out onto a baking sheet, brush the pastry with milk and then fold the edges up as a border and to stop the vegetables going everywhere.</li> <li>When the vegetables are ready, take them out and position them on the pastry and place in into the oven for 15-20 minutes.</li> <li>Take it out and sprinkle grated cheese on top and place back into the oven for another 5-8 minutes.</li> <li>Then serve with salad.</li> </ol>
