Ingredients

  • 1 onion grated

  • 1 tsp curry powder

  • 2 eggs

  • 8 tomatoes (medium-sized)

  • 1oz margarine

  • 1 tbsp chutney

  • 2oz rice cooked

Method

  1. Take the tops off the tomatoes and scoop out the centre pulp.
  2. Heat the margarine and fry the onion until soft.
  3. Add all the other ingredients, including the tomato pulp.
  4. Season well and cook for a few minutes then pile into the tomatoes.
  5. Bake for 15 minutes in a moderately hot oven (200°C 400°F gas mark 5)
