Ingredients

  • 1 onion peeled and chopped

  • 285ml vegetable stock

  • 1/2 butternut squash peeled, de-seeded and cut into chunks

  • 1-2 parsnips

  • 1 pinch seasoning

  • 450g stewing beef

  • 1 clove garlic peeled and minced

  • 4 potatoes

  • 2 tbsp chutney (I like to use something wintery, like with roasted red peppers or caramelised onions)

  • 285ml beef gravy (not too thick)

  • 2 carrot peeled and chopped

Method

  1. Brown the onions, garlic, and beef.
  2. Mix together the gravy, stock and chutney in a jug, chuck it all in a pot with the rest of the other ingredients and stick it in a medium oven for 2 1/2 hours, or a low oven for 4 hours. Doddle.
