Ingredients

  • 50g caster sugar

  • 1 tbsp double cream

  • 75g unsalted butter

  • 570ml full-fat milk

  • 3 tbsp dark rum

  • 60g plain flour

Method

  1. Put 60g of the butter in a saucepan with 60g flour, add the milk and whisk together over a medium heat until it is simmering and thickened.
  2. Turn heat to lowest setting, stir in the sugar and cook for 10 minutes.
  3. Add the rum, 15g butter and the cream. Put in jug, cover with cling film and keep warm.
