Smoked mackerel and egg salad

  • 1 splash olive oil

  • 1 lemon, squeezed

  • 5 eggs, hard boiled, halved or quartered

  • 1 bag salad leaves, washed

  • 4 tomatoes, chopped

  • 80g olives

  • 0.5 cucumber, chopped

  • 250g smoked mackerel

  • 1 avocado, ripe, sliced


  1. Put salad leaves in a large serving bowl.
  2. Add the tomato, cucumber, avocado and the hard-boiled eggs and use your hands to mix thoroughly.
  3. Flake the mackerel using a fork or your hands, and add to the salad with the olives.
  4. Dress with the lemon juice, some olive oil and season well with salt and pepper.

Handy Hint

Serve with spiced rice for a more filling meal.
