Spanish pork and chorizo casserole

  • 1 onion

  • 1 red pepper

  • 250ml red wine preferably Spanish

  • 1 knob chorizo around 10cm long

  • 3 potatoes finely sliced

  • 500g pork diced, or buy some chops and dice them yourself


<ol> <li>Slice the chorizo sausage and fry in some oil.</li> <li>After 2 minutes add the diced pork.</li> <li>Stir well whilst frying to avoid the sausage burning.</li> <li>Add diced onion and diced red pepper. Stir well.</li> <li>Once onion begins to soften add the potato, 1 glass of water and the glass of wine.</li> <li>Reduce heat, cover and leave to simmer.</li> <li>If it starts to get to dry add some water from the second glass.</li> <li>The dish will be ready to eat once the potato has cooked and is soft. <br />Serve with green salad, chunky bread with butter and the rest of the wine!</li> </ol>

    This is my mum's recipe. I think she originally found it it a Dutch magazine. We love it on a winter's evening. It is fine to make in advance, and like many casseroles is better on the second day. It freezes fine.
