Pasta with homemade tomato sauce

  • 1 vegetable stock cube made up to 150ml with hot water

  • 1 large red onion finely chopped

  • 3 cloves garlic crushed

  • 1 pinch salt and freshly ground black pepper

  • 1 bunch basil (use 4 leaves or so as a garnish)

  • 5 splashes cooking spray (low fat)

  • 350g pasta

  • 800g tinned chopped tomatoes


<ol> <li>Spray the low fat cooking spray in a large heavy-based saucepan and gently fry the garlic for 1 minute.</li> <li>Add the onion and some salt and pepper. Cook over a medium heat for 4-5 minutes, stirring often, until soft and golden.</li> <li>Add the tomatoes and stock to the saucepan. Reduce the heat and simmer gently, uncovered, for about 40 minutes, stirring occasionally. Reducing the sauce concentrates it to give a rich, delicious flavour.</li> <li>Check the seasoning, adding more salt and pepper, if needed. If you like, use a stick blender to partially blend the sauce.</li> <li>Cook the pasta shapes for 8-10 minutes, or according to pack instructions. Drain well, then return to the saucepan and add the tomato sauce. Stir and re-heat gently for a few moments, then serve, garnished with basil leaves.</li> </ol>
