Butternut squash soup

  • 1 onion

  • 1 vegetable stock in 500ml of water or enough to cover the veg

  • 1 butternut squash

  • 1 pinch nutmeg or cumin or any spice you fancy, optional


  1. Peel and chop the squash - throw into a pan.
  2. Ditto the onion.
  3. Add the veg stock.
  4. Add the pinch of whatever you or your little one might fancy.
  5. Bring to the boil then simmer for 20 minutes (ish) or until the squash is tender.
  6. Blend in a blendy machine thing.
  7. Serve. Add a dollop of natural yogurt to make it look pretty…or to cool it down if it's too hot to eat.
