Tomato and courgette pasta

  • 1 onion peeled and chopped

  • Some natural yoghurt

  • 1 red pepper diced

  • 3 courgette diced

  • 2 cloves garlic peeled and chopped

  • 1 bottle passata


  1. Fry the onion and garlic in a little olive oil for a few minutes.
  2. Then add courgettes and red pepper and fry for further 5 minutes.
  3. Add bottle of passata, season and simmer for 10-15 minutes.
  4. Add a tablespoon of natural yoghurt, stir in and remove from heat.
  5. Add to the pasta of your choice.

Handy Hint

Fusilli goes well with this as it gets nicely coated by the sauce.
