Ingredients

  • 75g caster sugar

  • 1 orange, large, peeled and juiced

  • 1 cinnamon stick, around 4cm

  • 2 tbsp port, or sherry

  • 1 tsp fresh ginger, grated, heaped. Or 0.5 tsp of ground ginger

  • 4 cloves

  • 450g cranberries, fresh or frozen

Method

  1. Chop the cranberries in a food processor and put in a saucepan.
  2. Pare the zest of the orange rind and cut into fine shreds. Put these in pan with the juice, ginger, sugar and spices.
  3. Bring up to a simmer, stir well, cover and let it simmer gently for about 5 minutes.
  4. Remove pan from the heat, stir in the port or sherry and, when cooled, pour into a serving dish. Keep in a cool place until needed. Remove cloves and cinnamon before serving.
