Tomato and bacon pasta sauce

Ingredients

  • 1 onion

  • 1 tsp tomato puree

  • 1 tin chopped tomato

  • 1 clove garlic

  • 1 tsp mixed herbs

  • 1 handful mushrooms

  • 1 bag lardons

Method

  1. Dry fry the bacon lardons until cooked and then add a splash of olive oil, the chopped onion and garlic.
  2. Fry on a medium heat for about 5 minutes and then add the sliced mushrooms, the tin of tomatoes and the tomato puree.
  3. Simmer on a medium heat for about 20 minutes.

Handy Hint

Take out the bacon for vegetarians, add a dash of chilli for grown up dinner! Can be prepared ahead and reheated easily. Serve with pasta.
