Broccolli and blue cheese soup

  • 1 pint chicken stock or vegetable

  • 1 stick celery finely chopped

  • 1 large head of broccoli (plus any other green veg you might have)

  • 2 cloves garlic finely chopped or crushed

  • 1 small onion finely chopped

  • 50g blue cheese


<ol> <li>In a large saucepan, gently saute onion, garlic and celery in butter and a dot of oil, until soft.</li> <li>Add the vegetables and saute for a couple of minutes.</li> <li>Add about a pint or so of stock.</li> <li>Bring briefly to the boil, then simmer gently for 20 minutes or until the vegetables are soft.</li> <li>Allow to cool slightly, then whizz with a hand blender.</li> <li>Add about 50g of blue cheese, stir to melt.</li> <li>Season and add more cheese if necessary.</li> </ol>
