  • 500g caster sugar

  • 1 pinch salt

  • 8 large egg white

  • 1 tsp rose water (optional)

  • 2 tsp vinegar

  • 1 tbsp cornflour

  • 150ml cream

  • 1 handful fruit (to go on top)


<ol> <li>Preheat the oven to 180C/Gas Mark 4.</li> <li>Line a baking tray with baking paper and draw a 20cm circle on it, you could draw round a dinner plate.</li> <li>Beat egg whites and salt together until they peak.</li> <li>Beat in the sugar a spoonful at a time until the meringue is stiff and shiny.</li> <li>Sprinkle cornflour, vinegar and rosewater over meringue and fold in lightly.</li> <li>Spoon the mixture onto the baking tray within the circle, flatten the top and smooth the sides. <br />Put in the oven and immediately reduce the heat to 150C/Gas Mark 2.</li> <li>Cook for 1 3/4 hours. Turn off the oven and leave the pavlova in there to cool completely or, if you have an electric oven, open the door to let it cool.</li> <li>Whip the cream and top the pavlova with cream and any fruit you like.</li> </ol>
