Ingredients

  • 1 onion

  • 850ml chicken stock, or vegetable

  • 1 red lentils

  • 1 large potatoes

  • 1 carrot

Method

  1. Peel and chop the vegetables and saute with the lentils in butter or olive oil for 5 minutes.
  2. Add stock and bring to boil then simmer for 30 minutes.
  3. Blend/liquidise.

    Quick, easy and economical, yet really hearty. My kids (5 & 2) love it.
