  • 1 egg yolk

  • 1 tbsp vanilla extract

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 170g unsalted butter melted

  • 95g white sugar

  • 360g chocolate chips

  • 200g plain flour

  • 180g white chocolate

  • 180g milk chocolate

  • 200g brown sugar

  • 1 egg


  1. Preheat the oven to 165C and grease a baking tray or line with baking paper.
  2. Sift together the flour, baking soda and salt and set aside.
  3. In a medium bowl, mix the melted butter, brown sugar and white sugar until well blended.
  4. Beat in the vanilla, egg and egg yolk until light and creamy.
  5. Add the sifted ingredients until just blended.
  6. Stir in the chocolate chips by hand, using a wooden spoon.
  7. Put the mixture in the fridge for 15 minutes or more.
  8. Spoon onto a baking tray. The cookies should be about 8cm apart.
  9. Take out after exactly 15 minutes. They will be really soft but will set in a of couple minutes.

Handy Hint

Don't worry if they look undercooked, they really do firm up and are delicious, soft and chewy.

    Should that not be a tsp of vanilla essence rather than a tablespoon?!

    Just a query about the 180g white and milk chocolate in the ingredients list - is that an alternative to the chocolate chips, or maybe that the 360g chocolate chips are made up of half white, half milk? Just there is no mention of it in the method and I wondered why.

    These are awesome, I have made these four times in three weeks. They are also lovely without the chocolate and with 200g raisins instead.
