  • 1 lime juiced

  • 4 tbsp soy sauce

  • 1 small lettuce

  • 1 bunch coriander chopped

  • 1 cucumber

  • 1 bunch mint some chopped and some torn

  • 3 spring onions finely sliced

  • 1 pinch brown sugar

  • 1 red chilli half chopped and half sliced (large and mild)

  • 1 handful rice noodles cooked

  • 250g steak


<ol> <li>Rub the steak with a little olive oil, some salt and the chopped chilli and cook according to taste, being sure not to overcook it. Set aside to cool slightly.</li> <li>Mix the lettuce leaves and noodles and add roughly torn mint leaves, cucumber and spring onions.</li> <li>Mix the dressing by combining the lime juice, soy sauce, chopped coriander, chopped mint and sugar and shake/stir well.</li> <li>Slice the beef slices thinly and lay on top of the salad.</li> <li>Pour over the sauce, scatter the sliced chillis and sesame seeds over the top.</li> </ol>

Handy Hint

<p>You can use left over roast beef for this instead of the steak.</p>

    This is a delicious way to get a little red meat of high quality into you without spending too much. Very tasty and works equally well for a small group of friends at lunch as it does for dinner with just you and DP.
