Banana muffins

  • 200g butter or soya margarine

  • 200g caster sugar

  • 1 tsp baking powder

  • 2 eggs

  • 200g plain flour

  • 2 bananas mashed

  • 3 tbsp blueberries


  1. Mix the butter and sugar.
  2. Gently whisk the eggs and add to the mixture.
  3. Add the flour and baking powder.
  4. Add the mashed bananas.
  5. Add the fruit if you're using it.
  6. Put in the muffin cases or bake as one whole cake at 190C for 35 minutes. Increase the time by 5-10 minutes if you like your muffins well done.

Handy Hint

Optional, a handful of blueberries or sultanas if making regularly to make a change. I bake these and my nephew Tommy likes to add the blueberries.

    These are fab thank you ChocCosmos - I baked them for 20 mins as assumed the time you stated was for a loaf and they came out perfect :)
