100 g caster sugar
160 g desiccated coconut
2 egg whites
- Heat oven to 180C/Gas Mark 4. Whisk the egg whites, sugar and coconut in a bowl until they lightly come together.
- With wet hands, press the mixture into a flat, square shape of about 1 cm high, on a board or bench.
- Cut out rounds, and place on a lightly oiled or non-stick baking tray. Bake for 15 minutes in the centre of the oven until very lightly golden. Cool on a wire rack, and store in an airtight jar.
