2 chicken breast
18oz red pesto, a jar
2 handfuls polenta, or a packet of breadcrumbs
- Cut the chicken breast into strips.
- Empty a jar of red pesto into a dish and coat the chicken strips in the pesto.
- Roll the pesto strips in dried breadcrumbs or polenta and fry in hot oil.
Good with hot pasta mixed with shredded basil leaves, cherry tomatoes and a glug of olive oil, or with cheesy mash.
