Red pesto chicken bites

  • 2 chicken breast

  • 18oz red pesto, a jar

  • 2 handfuls polenta, or a packet of breadcrumbs


  1. Cut the chicken breast into strips.
  2. Empty a jar of red pesto into a dish and coat the chicken strips in the pesto.
  3. Roll the pesto strips in dried breadcrumbs or polenta and fry in hot oil.

Handy Hint

Good with hot pasta mixed with shredded basil leaves, cherry tomatoes and a glug of olive oil, or with cheesy mash.
Easy peasy lemon squeezy dinner for kids!
Make them up in advance and freeze them.

    Love this recipe. You can posh it up a bit for adults by using whole breasts, transferring to an oven dish once they're cooked in the frying pan, placing a slice of mozarella on top and metling in the oven, then serving with fresh basil sprigs. Yum.
