225g butter, softened
115g icing sugar
225g plain flour
- Preheat oven to 150C. Line a tin 33cm by 23 cm with non-stick baking parchment.
- Cream butter and sugar together and add the flour and cornflour. Mix well until starts sticking together.
- Tip mixture into tray. Dip hand in flour and squidge out the semi formed dough until flat in the tray.
- Prick with a fork and bake until golden. Sprinkle with caster sugar and cut into pieces whilst hot.
- Leave in tin to cool.
