Ingredients

  • 1 onion peeled and chopped

  • 4 tbsp olive oil

  • 1 tin chopped tomato

  • 1 leek washed, peeled and chopped

  • 250g minced beef

  • 1/2 cloves garlic to taste

  • 1 peppers de-seeded and chopped

  • 1 tsp chilli powder to taste

  • 1 handful mushrooms chopped

Method

<ol> <li>Brown the mince in the olive oil.</li> <li>Add the vegetables, stir.</li> <li>Add the chopped tomatoes.</li> <li>Leave to reduce, season and serve.</li> </ol>

Handy Hint

<p>Change pepper for another spice - oregano gives an Italian feel.</p>

    great for low carbers - count your veg carbs. i like to eat this with low carb fajitas which i buy online from a low carb website
