Ingredients

  • 2 tsp baking powder

  • 2 tsp vanilla essence

  • 1/2 tsp salt

  • 90ml vegetable oil (or 85 g butter, melted)

  • 2 tsp ground cinnamon

  • 340g courgette finely grated or chopped or alternatively use yellow zucchini

  • 1/2 tsp bicarbonate soda

  • 3 tbsp unsweetened cocoa

  • 110g light brown soft sugar

  • 280g plain flour

  • 85g raisins (optional. You can also use sultanas, or chocolate chips)

  • 60ml water (or add up to 90ml if needed)

  • 1 egg

Method

  1. Prepare the muffin tins.
  2. Preheat the oven to 190-200C/Gas Mark 5-6.
  3. Stick it all in the food processor and blend…it's the easiest way!
  4. Spoon into tins/paper cases. Bake for 20-25 minutes, until the tops spring back when pressed gently.
