Salmon and green beans

Ingredients

  • 1 lemon

  • 4 salmon fillets

  • 1 tin anchovies

  • 125g cherry tomatoes

  • 80g green olives

  • 320g Greek yoghurt

  • 1 bunch basil

Method

  1. Cook green beans in boiling water for 4 mins. Drain and put in bowl.

  2. Add the cherry tomatoes, olives and 2 tbsp olive oil.

  3. Preheat large baking tray at gas 7. Put mixed beans/tomatoes/olives in on end and salmon at other.

  4. Season salmon and squeeze lemon juice over.

  5. Lay anchovy fillets over veg. Bake 10 mins - 15 if fillets are very large.

  6. Mix in a handful of torn basil leaves in at end.

    Quick but special. You can also make it in huge quantities if needed. Only one pan to wash up!
