Ingredients

  • 2 tbsp peanut butter

  • 2 chicken breast, chopped into chunks

  • 1 tin coconut milk

  • 1 handful coriander, chopped

  • 2 limes, juiced

  • 1 tsp Thai red curry paste

Method

  1. Fry the chicken in a little oil until it is coloured, about 2-3 minutes.
  2. Add the curry paste, peanut butter and coconut milk and simmer for 15 minutes.
  3. Squeeze in lime juice and add coriander.
  4. Season with salt and freshly ground black pepper and serve with rice. Snow peas or mange-tout can be added to this 5 minutes before serving if you wish.

    I loved this recipe with chicken and tried it with salmon steaks - just chucked them in raw with the rest of the ingredients so they were 'poached' in the sauce. Yum!
