Ingredients

  • 12kg leaves, (eg spinach, nettles, wild garlic)

Method

  1. Blitz up with small amount of water
  2. Strain, saving the water/juice. Discard leaves.
  3. Boil juice until proteins coagulate in stainless steel pan.
  4. Strain.
  5. Squash.

Handy Hint

Store in fridge for a couple of days. Add to any recipe.

    Just seen this on www.wildmanwildfood.co.uk and WOW!!! So easy, of course just how you make tofu but potentially free and very easy.
