Ingredients

  • 12 baby courgette, trimmed

  • 12 baby leek, trimmed

  • 3 tbsp extra virgin olive oil

  • 1 handful flaked almonds

  • 12 mangetout, trimmed

  • 1 handful fresh chives, snipped

  • 1 bunch baby carrots, with green tops on

Method

  1. Heat the olive oil in a wok, or large frying pan.
  2. Add the carrots and the courgettes and toss for around 4 minutes.
  3. Add the leeks and the mange tout and continue cooking for a few minutes more.
  4. Sprinkle with the snipped chives and flaked almonds before serving.
