  • 150ml mayonnaise

  • 3 eggs hard boiled, chopped

  • 1 tsp horseradish or use hot English mustard

  • 500g potatoes like jersey royals, scrubbed, cut into bite-sized pieces if big, otherwise leave them whole

  • 1 bunch fresh chives finely chopped, or use spring onions

  • 1 tbsp lemon juice


<ol> <li>Boil the potatoes until tender.</li> <li>In a bowl, gently mix together the potatoes, eggs, mayonnaise, horseradish or mustard.</li> <li>Season to taste.</li> <li>Add the lemon juice and adjust the seasoning.</li> <li>Snip the chives over the salad and fold in. Serve with a BBQ, or as part of a summer meal.</li> </ol>

Handy Hint

<p>Make large quantities and eat the next day with a lightly steamed fish.</p>

    This may be gluten free depending on the mayonnaise used. If you're making you own, it usually is.
