  • 30g butter

  • 1 onion, chopped

  • 1 handful parsley, chopped

  • 1 pinch cayenne pepper

  • 170g long grain rice

  • 2 eggs

  • 1 packet smoked mackerel

  • Brown bread butter and lemon wedges, (to serve)


  1. Cook rice, meanwhile fry the onion in butter.
  2. Add the onion to the rice, flake in the fish and season with salt and pepper and cayenne to taste.
  3. Stir over a gentle heat to warm through for a few minutes, meanwhile boil the eggs to medium soft, or hard boiled if you prefer.
  4. Add chopped parsley and roughly chopped eggs.
  5. Serve with brown bread and butter and Bucks Fizz for Mummy.

Handy Hint

Cook the eggs in with the rice.
