Lamb with feta, cannellini and soya beans

  • 1 tbsp olive oil

  • 8 pieces of lamb, (chop, rack or cutlet)

  • 200g frozen soya bean

  • 4 lemon wedges, (to serve)

  • 1 sprig mint, fresh; shredded

  • 1 green salad

  • 1 tin cannellini beans, drained

  • 100g feta, crumbled


  1. Brush lamb pieces with oil and griddle or fry until cooked.
  2. Cook soya beans in boiling water for 3 minutes then drain them.
  3. Heat oil in pan and cook cannellini beans for 3 minutes, add soya beans, mint and feta.
  4. Mash mixture together with a fork.
  5. Put bean mixture on a plate and place lamb pieces on top.
  6. Serve with green salad and lemon wedges
