Ingredients

  • 3 tbsp olive oil

  • 8 chicken thighs

  • 1 handful prunes

  • 1 handful olives

  • 3 garlic cloves, finely sliced

  • 1 handful capers

  • 3 tbsp red wine vinegar

  • 120ml white wine

  • a sprinkle of brown sugar

Method

  1. Put uncooked chicken thighs in dish and sprinkle some prunes, olives, garlic cloves and capers over them.
  2. Pour 3 tbsp olive oil, 3 tbsp red wine vinegar, and 3 tbsp of the liquid from the capers jar over the lot and pop in fridge overnight.
  3. Just before cooking, add 120ml of white wine and sprinkle some brown sugar over it all.
    Pop in oven for 50 mins at 170c.
