Ingredients

  • few fresh coriander

  • 2 tbsp hummus

  • 1 avocado

  • 2 splashes salad dressing

  • 2 tbsp Quinoa or wholegrain rice

  • 2 tbsp cooked beetroot

  • few slices raw veg, e.g carrot, peppers, courgette, broccoli, cucumber, celery, spinach

  • few tsp pomegranate seeds, sunflower seeds, salad dressing

  • 2 tbsp cooked butter beans

Method

  1. Put the quinoa or rice in a bowl, put beans on top, and then your choice of veg chopped to bite-size.
  2. Add dressing, then a dollop of hummus on one side and half a sliced avocado on teh other.
  3. Sprinkle with the pomegranate and sunflower seeds.
  4. Feel virtuous!

Handy Hint

This feels very healthy and can be prepared in no time if using leftover rice. Add your own choice of veg/beans/seeds/nuts but the pomegranate seeds make it taste lush!

    A lot of work, but very tasty. Not sure if I’ll have the time to make it again!
