Fast day soy and ginger fish with green veg

Ingredients

  • 1 bunch fresh coriander

  • 400g white fish fillets

  • 1 tbsp ginger, very finely chopped

  • 2 cloves garlic, finely chopped

  • 1 head of broccoli, chopped into florets

  • 1 handful asparagus, roughly chopped

  • 1 pak choi, roughly chopped

  • 2 tbsp soy sauce

  • 1 tbsp mirin

  • 1 lime, juice of

Method

  1. Pre-heat the oven to 180c.

  2. Lay each fish fillet on its own big piece of aluminium foil on baking tray. Divide the vegetables and arrange them on top of the fish. Scatter coriander all over.

  3. Make the sauce by combining the garlic, ginger, soy sauce, mirin and lime juice in a small bowl, then drizzle it over the fish.

  4. Use the foil to make parcels and pop them in the oven for 20-25 minutes.
