Ingredients

  • 1/2 tsp ground ginger

  • 1 block fine egg noodles

  • 1/2 tsp dried chilli flakes

  • 1 clove garlic, finely chopped

  • 10 mushrooms

  • 1 handful pak choi

  • 1 carrot, grated

  • 300-500ml chicken stock

  • 1/2 tsp ground cumin

  • 1 tsp dried lemongrass

  • 1 lime, zested

  • 1/2 tsp dried mint

  • 1 tbsp desiccated coconut

  • 1 egg

Method

  1. Use a good non-stick pan to dry fry the veg and all the spices. Add stock and simmer for five minutes.

  2. Add the noodles and cover the pan with a lid.

  3. Make a dent in the noodles and crack an egg in, simmer until cooked.

This recipe comes in at about 300kcals per serving.
