Ingredients

  • 4 cup(s) water

  • 1 halved Onion

  • 2 single Chicken breast fillets

  • 1 peeled and cut into matchsticks Carrot

  • 150g trimmed and sliced snow Peas

  • 1 deseeded and sliced red Capsicum

  • 1/2 shredded with hardcore removed Wombok

  • 3 trimmed and sliced diagonally green Shallots

  • 1/2 cup(s) Coriander leaves

  • 2 tablespoon(s) Lime juice

  • 1 tablespoon(s) fish sauce

  • 2 teaspoon(s) brown sugar

  • 1 deseeded and chopped red Chilli

Method

Step 1: In a saucepan, boil water, onion and chicken covered until chicken is cooked.

Step 2: Drain the chicken and discard onion.

Step 3: Cover carrot and peas in a bowl with boiling water until becomes bright green and tender crisp.

Step 4: Refresh them by running cold water, then keep aside.

Step 5: Shred the cooked chicken, then place carrot, snow peas, capsicum, wombok, shallot and coriander in a bowl.

Step 6: In a jar, add lime juice, fish sauce, sugar and chilli, then combine well.

Step 7: Pour the liquid mixture over salad and toss well.Step 8: Serve immediately.

    I like this idea, I would prefer more herbs and spices.
