Butternut squash soup

Ingredients

  • 2 potato

  • 1 pint vegetable stock

  • 1 butternut squash seeded and cubed

  • 1 tbsp curry powder

  • 1 onions

Method

  1. Put all the ingredients into a pan and bring to the boil, then simmer for 30 minutes.
  2. Add more water according to how thick/watery you want it.
  3. Could be blended if desired.

    I made this last night. It's one of my NY resolutions to try and learn to cook so I thought I'd start off with something simple. It was delicious and quick and easy to make!
