  • 1 pint vegetable stock

  • 1 butternut squash seeded and cubed

  • 1 tbsp curry powder

  • 1 onions


<ol> <li>Put all the ingredients into a pan and bring to the boil, then simmer for 30 minutes.</li> <li>Add more water according to how thick/watery you want it.</li> <li>Could be blended if desired.</li> </ol>

    I made this last night. It's one of my NY resolutions to try and learn to cook so I thought I'd start off with something simple. It was delicious and quick and easy to make!
