Ingredients

  • 150g self raising flour

  • 250g cornmeal (polenta)

  • 65g sugar

  • 1 tbsp baking powder

  • 1 tsp salt

  • 2 eggs

  • 50g butter (melted and cooled)

  • 50g margarine (melted and cooled)

  • 300ml warm milk

Method

  1. Preheat the oven to 200 degrees centigrade.
  2. Sift all the dry ingredients together into a large bowl and put aside.
  3. Lightly beat the eggs and then stir in the melted fats and warm milk.
  4. Pour into the centre of the dry ingredients and with a large metal spoon fold together until just smooth and blended.
  5. Pour into well greased muffin tins (about 4 cm deep) or a 23 x 12 x 10 cm loaf tin.
  6. Bake in the preheated oven, 20 minutes for the muffins or about 35 minutes for the loaf.
  7. Serve warm
