  • 150g self raising flour

  • 250g cornmeal (polenta)

  • 65g sugar

  • 1 tbsp baking powder

  • 1 tsp salt

  • 2 eggs

  • 50g butter (melted and cooled)

  • 50g margarine (melted and cooled)

  • 300ml warm milk


<ol> <li>Preheat the oven to 200°C.</li> <li>Sift all the dry ingredients together into a large bowl and put aside.</li> <li>Lightly beat the eggs and then stir in the melted fats and warm milk.</li> <li>Pour into the centre of the dry ingredients and with a large metal spoon fold together until just smooth and blended.</li> <li>Pour into well greased muffin tins (about 4 cm deep) or a 23 x 12 x 10 cm loaf tin.</li> <li>Bake in the preheated oven, 20 minutes for the muffins or about 35 minutes for the loaf.</li> <li>Serve warm.</li> </ol>
