  • 175g cheddar, or red leicester, grated

  • 1 tbsp mayonnaise

  • 2 tbsp red onion, chopped

  • 1 tin chilli con carne, Stagg is best, can get a vegetarian version

  • 4 tbsp sour cream

  • 200g soft cheese, full fat, softened

  • 1 clove garlic

  • 2 tbsp fresh coriander, finely chopped

  • 1 plum tomatoes, seeded and diced

  • 1 tbsp chilli powder

  • 1 bowl tortilla chips


  1. Preheat oven to 180C/Gas Mark 4.
  2. Combine soft cheese, sour cream, mayonnaise, seasoning mix and garlic pressed.
  3. Spread soft cheese mixture evenly.
  4. Spread chilli over cheese mixture.
  5. Grate cheddar cheese evenly over chilli.
  6. Bake for 20-25 minutes or until cheese is melted.
  7. Meanwhile, chop red onion.
  8. Dice tomato and finely chop coriander.
  9. Remove from oven. Sprinkle onion, tomato and coriander over top.
  10. Serve hot with tortilla chips.

    This recipe can be adapted to vegetarian, using a meat-free chilli mix, can also be reduced fat, by using low fat cream cheese, etc. Has plenty of taste, and is fantastic for a party dish! I wouldn't recommend allowing children to help, due to having to use sharp knives and a hot oven.
